WHere is an easy version of a cocktail from our latest menu. Designed as a batch prepared mix which is packed full of tastes of the Christmas time, making it ideal for your festive gathering. Reserve the remaining citrus syrup to use in brunch beverages, sweets, or to mix another batch of bikinis.
Bikini Recipe
Makes enough for 10 people
To make the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g caster sugar
To make the Premix (produces 850ml, to serve 10)
400ml decent vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Place all the components in a pan, heat until it reaches a simmer, stirring to dissolve. After that, remove from the burner allowing it to cool down entirely. Decant into an clean bottle, seal and refrigerate it in the fridge, it will last for up to four weeks.
To make Batch Mix: Pour every liquids in a large bottle, leave to sit for an hour, then pass it through best through muslin, to ensure it's fully clarified.
For serving: Measure 85ml of your premix into a stirring glass containing ice, and stir gently for about 60 seconds until cold. Strain into a cold coupe glass or equivalent, garnish with the cranberries and complete it by giving it a brief mist of the essential oil over the drink.
